We all need recipes that can be whipped up with a moment’s notice: recipes that require few ingredients and can be made ahead of time. For example, about a week after my engagement, I invited two of my best friends to come down to dinner. It’d been awhile since I’d spent some QT with them, and I while I wanted to treat them to a delicious meal, I also didn’t want to be slaving away in the kitchen when I could be gossiping having some intellectually stimulating conversation.
In the days before their visit, I racked my brain for a meal that would impress, but would take little effort on my part. I also had to consider my friend Shannon’s picky palate as well as my own! I needed something that we’d all enjoy. (It’s been far too long since I last made a “That’s what she said” joke.) For our entrée, I served some pressed sandwiches that required being made the night before to truly be pressed.

Hey, I am serious about pressing my sandwiches. Photographic evidence of their deliciousness never made it to the blog. As a side, I prepared an amazing Antipasto Pasta Salad… which also never made the blog. And for dessert… well, I ran out of time to make prepare the night before. So it was a good thing that what I had planned was quick, easy, and I was able to throw it together with minimal interruption of the gossiping that went on my kitchen. Peanut Butter Parfaits Ingredients
Yields about 8 dessert-sized portions

2 cups graham crackers

5 Tbs melted butter

8 oz cream cheese (softened)

2/3 cup peanut butter

1 Tbs milk

2 cups powdered sugar

2 tubs (or 1 large tub) frozen whipped topping, thawed (Cool Whip)

1-2 bags of miniature Reeses, chopped
Directions

Combine the graham cracker crumbs with the melted butter. Spoon into the bottoms of dishes. Reserve some crumbs for garnish if desired.

In the bowl of a mixer combine cream cheese, peanut butter and milk until smooth. Slowly beat in powdered sugar then fold in the whipped topping. Spoon peanut butter fluff over the graham cracker crusts then chill at least 2 hours. Garnish with reserved crumbs and peanut butter cups.
I took the selfless route on this one. You all know I loathe cream cheese. However, I knew this was a dessert my peanut-butter-lovin’ pals (and fiancé!) would enjoy. I also secretly had been dying to use my adorable dessert dishes, and this recipe fit the bill. Their presentation is adorable.

Your taste buds won’t soon forget this one. I don’t know many people who can resist the seductive combination of peanut butter and chocolate. Except for those poor souls with peanut allergies.
