I’ve been dying to make pizza on the grill all summer long. When my friend Jacky and I made plans to get together, I immediately invited her over to do just that.

I had recently seen an incredibly easy recipe for BBQ chicken pizza on My Baking Addiction (one of my favorite blogs!) and knew I had to make this. Lloyd loves BBQ chicken pizza. I posted a very similar recipe for BBQ chicken pizza and Lloyd’s love for it back in January. Seeing this recipe reminded me of that pizza, and I wanted to make it slightly differently, and try it on the grill. It seemed like the perfect meal to bid adieu to summer.

BBQ Chicken Pizza

Serves 2-3 people

Very slightly adapted from My Baking Addiction

Ingredients

  • 1 package dough, or homemade dough
  • 1/2 cup BBQ sauce
  • 1 cup chicken, cooked and shredded
  • 1/2 cup thinly sliced red onion
  • 2 cups Pepper Jack Cheese

Directions

  1. Light grill and spread dough. Spray one side of dough with cooking spray, and cook until the bottom is slightly browned and crust has formed.  It should be “heavy” enough to remove from grill in one piece.
  2. Remove from grill and spread BBQ sauce over browned side dough.
  3. Add chicken, onion, and cheese.
  4. Bake 12 to 15 minutes or until crust is deep golden brown. Cut into squares; garnish with cilantro.

This pizza hit the spot! The grilled crust lent the crust a wonderful consistency and just a hint of a smoky flavor. (Bonus for not having to turn on the oven!) The barbecue sauce was a nice deviation from the standard red sauce, and I think it’s a must when making this pizza. (Do not try to achieve a tangy, smoky BBQ chicken pizza and use red sauce!) Since last time I used mozzarella, it was nice to switch it up with the Pepper Jack, with its creamy, mild flavor and its gooey-melted texture. 

Sadly, Lloyd was not home to enjoy this meal… just means I’ll have to make it again!
