Hey you fabulous readers!  My name is Deneene from a little blog called Southern Living Yankee.

I’m so excited to be doing my first guest post.  Thank you so much to Liz for giving me this opportunity.  I have an almost 3 year old daughter and I decided a while back that she is going to eat better than I did.  Also about that time, I started Weight Watchers and fell in love with the program.  My goal is to take my old recipes and make them healthier and to try new recipes that are healthy and delicious!  These cookies are absolutely amazing.  I love brownies, but not all the fat and calories that go along with them.  I was so excited when I was experimenting with cake mixes and found the perfect combination with these cookies.  I hope you enjoy them as much as I do!

CHOCOLATE COOL WHIP COOKIES

Servings: 40 – 50

Points+: 1 (per cookie)

Ingredients

  • 1 box milk chocolate cake mix
  • 1 16-oz. container Fat Free Cool Whip
  • 2 eggs
  • 1/2 c. powdered sugar

Directions

  1. Preheat oven to 350 degrees.
  2. Combine cake mix, Cool Whip and eggs in bowl and mix until well combined.  Batter will be very sticky.
  3. Place in refrigerator and chill for at least one hour.  You can leave in refrigerator overnight if you want to make the batter ahead of time.
  4. Drop by rounded tablespoons into powdered sugar and roll to coat.  Place on a greased cookie sheet.  Bake for 14 minutes.
  5. After removing from oven, allow to cool for a couple of minutes before removing from cookie sheet.

These are so incredibly delicious!  They taste just like a brownie, but were so much better because I know they were only one point per cookie.  How great is that?
