Lately, I’ve been so busy that my desire to cook or bake in my free time has been non-existent. Lloyd was quick to remind me last night that I haven’t been feeding him, as he rummaged through the cabinets for snacks. I reminded him that there was pasta salad in the fridge, but he told me he’d “already had some today” and wanted something else.

All he came up with a jar of unsweetened applesauce, which he ate straight from the jar in front of the TV. He had me in hysterics as we watched the President’s speech where he mentioned “people struggling to put food on the table” and Lloyd gestured to his jar of sauce and said, “That’s right Obama. We’re so hard up my girlfriend makes me eat baby food for dinner.”
He’s funny, that’s for sure.
The few times I’ve cooked recently, I’ve taken to the grill or my trusty Griddler due to the heat. One of those Griddler meals was breakfast moonlighting as dinner in the form of this batch of delicious pancakes.

Strawberry Vanilla Pancakes

Yields about 8 pancakes

Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg, lightly beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons vanilla extract
  • 1 cup fresh strawberries, sliced (Plus additional for garnish)
  • butter, optional
  • maple syrup, optional
  • confectioner’s sugar for sprinkling, optional
  • whipped cream, optional

Directions

  1. In a bowl, mix together the flour, brown sugar, baking powder and salt.
  2. Slowly add the milk, oil, egg and vanilla to the dry ingredients and mix combined. Stir in the strawberries.
  3. Heat a large skillet or griddle over medium heat, and coat with butter or cooking spray. Pour batter onto surface, forming pancakes.
  4. Flip with a spatula when bubbles appear in the center. Cook until golden brown on each side.
  5. Sprinkle with confectioner’s sugar, syrup or whipped cream.  (Or all three!)

The smell was heavenly as the batter sizzled away on the hot pan. These made-from-scratch-strawberry-studded pancakes were light and fluffy, like any good ones should be. I deemed them to be just fine without butter or syrup.  We opted for a simple whipped cream topping and a few additional berries for garnish. The pops of summery, sweet red berries, and cool, whipped cream was rich and decadent.

I’m sure you’ve had your fair share of pancakes or waffles with strawberries served on top, but have you tried them with the strawberries in the batter? It changes the pancakes into something even better. The two tablespoons of vanilla extra might sound like too much, but it totally makes these pancakes taste like dessert!

Do yourself a favor, and make these pancakes now.

Or at least make something better than applesauce.

  1. I love fruit both in and on my pancakes and you are completely right about the extra vanilla. It makes such a difference! I love your plate too. I have a tiny one just like it. :)

  2. Jason could relate to this story ;) I DO feed him, but let’s just say he snacks on a lot of pistachios and almonds. ;)

    YUM pancakes! we were recently at a B & B where they added whip cream to the waffles, and I almost asked them not to on mine (I’ve seen it done but never had it!). Jason looked at me like I was crazy, and now after trying them that way, I know I was! ;)

  9. How hilarious. I can think of similar conversations I’ve had with my husband. :) Case in point, I’d love to eat these pancakes for dinner, but somehow breakfast-for-dinner doesn’t fly for him. Sigh.

    This looks so delicious! I always put a little vanilla extract in my pancakes and french toast but I love all the other fabulous ingredients in this! Yum! :)

  19. I have the griddler too, and I adore it! I’ve been cooking turkey burgers on it non-stop this summer to avoid using my oven. These pancakes look delish – breakfast for dinner is the best!
