Hi Blog is the New Black Readers! My name is Jen and I blog over at Beantown Baker. As the name implies, I live in Boston with my Hubby and our two fat cats. During the work day, I sit at a computer, working as an engineer for a huge corporation, but once the end of the day comes around, I love to bake!

Two Saturdays ago, Hubby and I picked 15 pounds of blueberries and 12 pounds of nectarines. I’ve enjoyed coming up with new ways to use up our abundance of fruit! This past weekend we were in CT visiting Hubby’s family and I decided to whip up a quick dessert using some of this ripe seasonal fruit.

This cobbler recipe seriously could not be any easier. You could adapt it to work for any kind of fruit you have on hand. And I’m sure that frozen fruit would work just fine. You literally throw the batter together in a bowl with just a whisk or a fork, chop up your fruit, layer it all in a pan and throw it in the oven. A baker of any skill level could definitely tackle this recipe.

Hubby ate his cobbler warm with vanilla ice cream on top, but I just ate mine as is. Either way, the cobbler really highlights the flavors of the fruit and provides an additional sweetness from the batter that’s just amazing.

Nectarine Blueberry Cobbler

Adapted from All Recipes

Serves 6-8

Ingredients

  • 4 Tbsp butter
  • 3/4 cup flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 cup fresh nectarines or peaches, diced
  • 3/4 cup fresh blueberries
  • 1 Tbsp sugar

Directions

  1. Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
    Put butter in an 8-inch square or 9-inch round pan. Place pan in oven to melt butter then remove pan from the oven.
  2. Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add the milk and stir until the batter is smooth. Pour batter into pan. Scatter fruit over the batter. Sprinkle with remaining 1 Tbsp of sugar.
  3. Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with vanilla ice cream.

  20. I made a cobbler a few weeks ago with blueberries and peach – they are such a great combination. It was a huge hit especially with some vanilla ice cream on top! Yours looks great!
