I’m raising the bar.

The salad bar, that is.

There are only so many times I can shove lettuce in the face of my Bud Light drinking, construction boot wearing, truck driving fiancé.  After awhile he gets a little fed up with the healthy stuff, and resorts to his McDonalds dinners for one.  I knew it was high time I served up healthy fare disguised as a horse of a different color.  After all, how many times can I serve him a bed of salad with some variation of chicken on top?! 

I’ll tell you the answer: not many.

I’m shaking it up a bit.  Enter: Marinated Lime & Mint Shrimp Salad.

Marinated Lime & Mint Shrimp Salad

Inspired by A Cambridge Story

Serves 2

Ingredients

  • ½ lb. shrimp
  • 4 C lettuce of choice
  • 2 C grape tomatoes, halved
  • 1 avocado, sliced in half
  • 2 ears of corn
  • ½ C feta cheese
  • 2 tbsp EVOO
  • 2 tbsp honey
  • 3 limes
  • 6 cloves of garlic, minced
  • 1/2 C fresh mint, chopped (more for garnish, if desired)

Directions

  1. Whisk together EVOO, honey, juice of 3 limes, and garlic.  Add chopped mint.  Marinate shrimp with half of mixture, reserving the rest. 
  2. Skewer shrimp when ready to grill.  Add shrimp, corn, and avocado to grill.  Cook until done. 
  3. Place lettuce, tomatoes, and feta cheese on two plates. 
  4. Remove shrimp, corn, and avocado from grill.  Cut corn off the cob. 
  5. Top each salad plate with shrimp, avocado, and corn.  Garnish with more mint, if desired.
  6. Drizzle with remaining dressing.

This marinade was wonderfully unique. Though mild, the lime added a zippy tartness which was mellowed out by the refreshing mint.  (Mint is quickly becoming my favorite herb!)  Both citrusy and sweet, the dressing added great flavor to the crisp lettuce, the golden corn, and tangy feta.  The grilled avocado halves a la Kristin were a great idea!  It left the ‘cado crispy on the outside and warm and creamy on the inside.  These flavors were light and satisfying, and didn’t require an oven- the epitome of a winning summer dinner!

  6. I’m not a huge shrimp fan but the colors on this salad are beautiful!

    I’m on my 2nd week of salads every night for dinner because I just don’t have time for any other cooking right now! it’s such a great way to get a variety of different foods. Luckily my man doesn’t mind too much. ;)
