If you are what you eat, Lloyd is a McDonald’s cheeseburger, topped with Junior Mints and sprinkled with a dusting of cinnamon sugar. 

Mmmmm… tasty!

The way to a man’s heart, or at least Lloyd’s, truly is through his stomach.

It is no secret that my fiancé has the palate of a 5-year-old, and topping his list of favorite foods is anything mint chocolate.  His absolute favorite snack however, are the Girl Scouts’ Thin Mint cookies.  Sadly, they are only available once a year for a short time, and even though Lloyd hoards an insane amount of boxes each year, they never last him long.  When I saw Katrina’s recipe for homemade thin mints, there was no doubt that this recipe was getting stored and saved.  I figured this was the perfect recipe to keep in my back pocket for when I needed to make Lloyd swoon. 

And swoon he did. 

I’ve already mentioned that for Lloyd’s birthday week, we celebrated with some of his favorite dishes during the week.  I saved these for the finale: his birthday dessert!

Homemade Thin Mint Girl Scout Cookies

Ingredients

Chocolate Wafers

  • 8 ounces butter, room temperature
  • 1 C powdered sugar
  • 1 tsp vanilla extract
  • 1 C unsweetened cocoa powder
  • 3/4 tsp salt
  • 1.5 C flour

Chocolate Peppermint Coating

  • 1 pound semi-sweet chocolate chips
  • peppermint extract, to taste (about 1-1.5 tsp)
  • shortening or oil, as needed for thinning

Directions

  1. Preheat oven to 350.
  2. Cream butter until fluffy.  Slowly add powdered sugar, scraping the bowl to combine if necessary.
  3. Add vanilla extract, salt, and cocoa powder.  Mix until combined.
  4. Add the flour and mix until the dough is just slightly crumbly. 
  5. Knead the dough until smooth, forming a ball.  Separate into two balls to make it easier to worth with.
  6. Roll out dough very thin.  (I rolled it between parchment paper).  Using a cookie cutter or the bottom of a glass, cut out the cookie shapes and bake for 10 minutes.  Allow to cool completely.
  7. Meanwhile, melt your chocolate until smooth, adding shortening or oil to thin out if necessary.  Stir in peppermint extract. 
  8. Gently drop the cookies into the melted chocolate, covering completely.  Allow the cookies to to dry and set on wax paper.  Place the cookies in the fridge or freezer, if desired.

These were even better than I imagined they would be!    I was so impressed with these decadent, chocolaty discs of pepperminty goodness!  The flavor was a dead ringer for their beloved namesake.  My cookies were larger than the original Thin Mints and my chocolate center was a bit thicker, resulting in a softer texture.  I’m going to make a bold statement here and declare that I liked these better than the Girl Scouts’ version, if only because they were a tad softer.

And, much like the boxes of Girl Scouts’ Thin Mints, these disappeared rather quickly.

  2. De-lish! I’d definitely be on board with the softer texture–sometimes the crispiness of the Girl Scout original is what makes me “meh” on them. I’m glad that this birthday treat was such a success!

    Darn those girl scouts for hoarding these cookies and only selling them once a year I guess you’ve out smarted them at their own game! My husband’s job got boxes and boxes and boxes of free cookies last year and we FILLED the pantry with thin mints. They didn’t last long around here either. I’ve GOT to try this! Thanks for sharing!
