I spied these homemade graham crackers on a little website by a woman you may know.  Martha Stewart?  Inspired by Ashley, I’ve wanted to make my own graham crackers for quite awhile.

Homemade Graham Crackers

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup whole-wheat flour
  • 1/2 cup untoasted wheat germ (I only had toasted- worked fine!)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 3/4 cup packed light-brown sugar
  • 2 tablespoons honey

Directions

  1. Preheat oven to 350 degrees. Whisk flours, wheat germ, salt, baking soda, and cinnamon in a medium bowl; set aside.
  2. Put butter, brown sugar, and honey into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, 2 to 3 minutes, scraping down sides of bowl as needed. Reduce speed to low. Add the flour mixture, and mix until combined.
  3. Turn out dough onto a floured surface, and divide into quarters. Roll out each piece between 2 sheets of floured parchment paper into rectangles about 1/8 inch thick.
  4. Using a pastry wheel (if you own one!) or a pizza cutter (like me!)  score each piece in half lengthwise and crosswise, pressing lightly, so as not to cut all the way through,  forming rectangles.  Stack parchment and dough on a baking sheet and chill in freezer until firm, about 20 minutes.
  5. Remove two sheets of dough from freezer. Pierce crackers using the tines of a fork. Transfer to large baking sheets lined with parchment paper. Bake, rotating halfway through, until dark golden brown, 8 to 9 minutes. Repeat with remaining dough. Let cool on sheet 5 minutes; transfer crackers to wire racks to cool completely.

These graham crackers are out of this world!  I swear, if you make these once, you will never want to buy them again!  I have a feeling my friend Meg would love these!

These are not my best work, but I’ve accepted that I am not Martha Stewart.  They were not uniform in size, and some were thicker than others, but they all tasted amazing.  I had to keep rolling the dough, trimming it to make a neater square/rectangle, and then rolling the discarded dough, etc.

These were much softer than your standard box o’ grahams, but I attribute that to the fact that I um, added an additional stick of butter to the dough. 

I know.

It was an accident, I swear.  A good accident, but an accident.

The dough seemed to dry so I immediately grabbed the nearest stick of room temperature butter and incorporated it into the mix.  Voila!  Right after, I realized I could have used a bit of water instead.

Coulda, shoulda, woulda.  Hey, I don’t regret it. Winking smile

Anywho, if your dough seems a bit crumbly, and you don’t want to clog your arteries for the sake of graham crackers (although it would be worth it!) just add water.

There were truly the perfect snack for a snow day!  (Or any day!)  They were soft, buttery, (obviously!) and addicting.  The taste mimicked the aroma of the grahams: the subtle cinnamon, a hint of salt, and sweetness from the honey.  These were a fun snack to make, and would certainly be easy to make with kids!

  5. I couldn’t agree more..I have a love/hate relationships with Sunday too. I keep thinking of everything I need to do to prepare for the work week, but I don’t want to do it because its my last day “off” The crackers look great:)

  7. I have really mixed feelings about Sundays. Some days they are the best and others just feel like they are filled with impeding doom…aka the work week. Bleh.

    Hi Liz, now you just need to s’mores!

    I’m a server and our pastry chef makes s’mores with homemade graham crackers and homemade passion fruit marshmallows with good ole Hershey’s chocolate bars.
    But, I betcha some exotic chocolates would be even better. I just went on a trip to Chicago and bought some amazing chocolates from a chocolatier called “Vosges Haut Chocolat.” They are AMAZING! They have flavors like “wasabi, ginger, and black sesame”, “Sicilian almond marzipan + amaretto” and my favorite, “sweet indian curry, coconut in dark chocolate”
    I bought the mini candy bar libraries so I can have a little bit of everything!

    They are perfect in there imperfections! I’ve been wanting to make grahams for a while now, just haven’t gotten around to it! Ha, I bet yours taste more like graham cookies with all that buttah!

    I get anxious on Sundays too and the day always seems to FLY by!

  19. I definitely feel you on the Sunday blues. As a teacher, I tend to let all my grading pile up and am forced to face it on Sundays. Yuck. These graham crackers look like an awesome way to bring happiness into the day though :)
