I feel as though because I have a food blog, there is a misconception about me.  People assume that I am a foodie. 

Au contraire, my friends! 

I am so simple in our tastes.  I rarely go out to eat, and when I do, am the world’s pickiest eater!  I have to butcher every dish I order, make sure all dressings and sauces come on the side or not at all.  Don’t you dare put cole slaw on my plate, lest that mayo-layden junk pollute whatever food it is next to! 

I don’t touch fish.  I turn my nose up at bleu cheese, goat cheese, and burrata.   I don’t even enjoy eating dessert in a restaurant because ummmm I’d rather go get an ice cream cone. 

However, if there is one meal I truly enjoy at a restaurant, it’s breakfast.

Omelettes, and pancakes and french toast, oh my! 

Home fries!  Over-buttered toast!  Bacon!  Maple syrup. MAPLE SYRUP! 

I mean, I can’t not think of Buddy the Elf when I order a big stack of fluffy pancakes and then drown them in that stuff.  Heck yes.  Breakfast is the stuff dreams are made of, and I think it was a meal created with hangovers in mind.  I’ve recreated many a tasty breakfast dish at home, but until now, the one thing I could never quite conquer was home fries! How do they do it?  How do they make them so darn irresistible?!

While I still don’t have the exact answer, I think my attempt comes pretty damn close! 

The secret?  Nuke them in the microwave to save some time and get them soft and pillowy on the inside before pan-frying them to achieve that desired crisp on the outside.

Home Fries

Adapted from Smitten Kitchen

Servings vary

Ingredients

  • 1 1/2 lbs Yukon Gold potatoes, washed, peeled, and cubed
  • 2-3 tbsp extra virgin olive oil (or butter)
  • salt and pepper, to taste
  • garlic powder and onion powder, to taste
  • ketchup, for serving

Directions

  1. Place cubed potatoes in a microwave safe bowl.  Heat on high until softened, about 7 minutes. 
  2. Meanwhile, heat EVOO in a skillet over medium heat.  Add potatoes and cook, stirring minimally, until the bottom of the potatoes is golden brown, about 5 minutes.  Flip potatoes and continue to cook until the other side is browned, about another 5 minutes.
  3. Reduce heat to medium-low.  Add your seasonings. 
  4. Continue to cook potatoes, stirring frequently, until crispy and brown. 
  5. Serve with a healthy dose of ketchup.

  3. I’m right there with you…one of the only reasons I order omelettes at diners is for the side of homefries! And there’s nothing worse than when they run out and try to sub in french fries….

  4. YES. My favorite breakfast side! And I would happily eat breakfast for every meal if I could, much to my boyfriend’s chagrin. It’s just SO. DARN. GOOD.

  5. I think we were separated at birth! I’m totally a ‘picky’ eater too. You basically described me in the beginning. We can be the weirdos together butchering menus if we ever meet up lol.

  6. I love breakfast too. Awesome tip about nuking potatoes first before frying. I like drowning my home fries in ketchup and hot sauce!

  8. I am a super picky eater too! I butcher just about everything at a restaurant to make it something I will eat! These potatoes look fantastic!

    Um, what is “burrata”? Yes, I will try google!
    Not a picky eater (don’t look at me!), not a ‘foodie’ either, but I know what I like and these are great, scratch that, GREAT!! ;)

    You sound just like my husband! He loves food. He loves to eat. But he is SO picky! I used to be the pickiest eater on the face of this planet, but luckily one day I just started trying new things & surprisingly ended up loving so many things that I once thought I hated. As it turns out, our taste buds are ALWAYS changing. I still turn up my nose at bleu cheese, but I did manage to eat a green olive the other day without vomming!

    …the moral of my story here is, trying something new, you might like it! :)

  18. How interesting to read the comments and see how many picky eaters there are amongst food bloggers. We’re definitely NOT picky and I wonder if I would bother with a blog if I didn’t love to experiment with food. Hmm. Regardless, I do agree that home fries are the only reason to order an omelet in a restaurant and I’m annoyed as hell if they don’t have them. :)

    Haha, I’m the same way – the only way the word foodie applies to me is in the fact that I love food, not because it has to be super fancy! These look delicious!

  23. I definitely judge a diner by their homefries. I also like mine to be crispy as possible, so I’d probably throw these in for a bit longer. These have a very awesome diner feel to them, well done :)

  24. There’s nothing better than simple fried potatoes. My Dad would whip up something very similar when I was little and it was always a treat.

    I love breakfast! Perfect greasy, sugary hangover food… or uh, anytime food! And I have a serious weakness for crispy home fries. My favorite!
