I’m elated that BBQ season is finally upon us! No more heating up the house when I turn on the oven, less pots and pans to clean, sending Lloyd out to get dinner started… the list goes on! When I saw this recipe, I knew it would be one the first recipes of the season to hit our grill!
Hawaiian Grilled Pork Chops
From Sing for Your Supper
Yields 4 chops
Ingredients

4 boneless pork chops (at least 2/3 inch thick)

1 cup soy sauce
-
1/2 cup brown sugar
-
2 cloves garlic, chopped
-
1 teaspoon cooking sherry
-
1/4 teaspoon cayenne pepper
-
juice of 1 lime
-
1/2 teaspoon ground ginger
Directions
-
Whisk together the soy sauce, garlic, sherry, cayenne, lime juice and ground ginger. Place the pork chops in a Ziploc bag and cover with marinade. Refrigerate for 3 hours or overnight.

Cook chops on a grill (or grill pan) until cooked through.

Serve with pineapple, if desired.
Pineapple Couscous
Serves 6
Ingredients

1 C uncooked couscous
-
3/4 C chicken broth
-
1 can pineapple bits (drained)
-
4 scallions, chopped
-
1/4 C red onion, chopped
-
1/4 C carrots, chopped
-
1/4 C pecans, chopped
-
2 tablespoons oil (I used sesame)
-
2 tablespoons soy sauce
-
salt & pepper, to taste
Directions
-
In a sauce pan, bring chicken broth to a boil. Add cousous, cover, and remove from heat. Let stand for 5 minutes.

In a small bowl, whisk oil and soy sauce with salt and pepper.

Fluff couscous with a fork, and add all other ingredients.

Toss well with oil & soy sauce mix.
I know it looks like a big, juicy steak, but I promise you that’s a thick, tender pork chop. The marinade was slightly sweet, a little saucy, and the chop was moist and flavorful. I served refreshing pineapple on the side for some extra sweetness. Pineapple always transports me to the tropics, so this was a perfect summer time dinner. The prep and cooking were effortless, as on-the-barbie meals usually are.
As a recent couscous convert, I had just the dish in mind to compliment these chops. The couscous boasted lots of different textures and flavors. The crunchy pecans and the snappy carrots paired nicely with the sweet pineapple, the zippy red onion, and the earthy scallions.

What a yummy marinade! I have converted to couscous this year too! Well couscous and quinoa. Nice alternatives to rice and potatoes, especially cause you get to pack them with goodies!

That does look like a big juicy steak – I was thinking its one h*ll of a pork chop! My last batch was deceiving. The big beautiful one on top, and two microscopic fatty disappointments underneath. grrr. Love pork and pineapple!
