Thank you for all your congratulatory and well-wishing tweets, Facebook posts, and emails. The wedding went off without a hitch! It was like any other nuptials, but this time, Lloyd and I were the the bride and groom. He looked handsome as ever in his wedding garb, and I felt like a princess in my white dress. My cousin officiated in what was a short, heartfelt, and very “us” ceremony. After we were all married up nice, we partied up the evening with those near and dear to us. It was truly a perfect day.
We followed up with a “mini moon” Nantucket, spending 4 days enjoying each other’s company as newlyweds, biking all over the island, dining at amazing restaurants, and sipping some delicious cocktails. I even got beach-loathing Lloyd to join me oceanside one day.
Marriage means compromise, people.
And suddenly, our little vacation was over, and we returned to reality, going about our daily lives as usual. Since we’ve lived together for 3+ years, married life isn’t that different, aside from the new, ever-endearing terms of husband and wife that we now use.
I’ll admit, although we are still busy as ever, it’s nice to have some free time back! Our week nights are no longer filled with tallying up RSVPs, figuring out seating arrangements, or arguing over last-minute craft projects. And finally, I actually have time to cook real dinners. Leading up to the wedding, we’d been doing a lot of fridge-scrounging at meal time, or relying on take out.
But enough is enough. Time for this house wife (!) to get back to the kitchen and cook that husband some good food!
Ginger Lime Chicken Lettuce Wraps
Inspired by Six Sisters
Serves 4
Ingredients

1 lb. ground chicken
-
5 cloves garlic, minsed
-
1/4 C red wine vinegar
-
2 limes, juiced
-
1/4 C soy sauce
-
1 tsp pepper
-
lettuce for serving (recommend butter lettuce or iceberg)

1/2 C cilantro, chopped
-
1 bunch green onions, sliced
-
1/2 can water chestnuts
-
1/2 C cashews
Directions
-
Sauté chicken in a pan over medium heat until cooked through.

Add garlic, vinegar, lime juice, soy sauce, salt, and pepper. Turn heat down and simmer for about 10 minutes.

Remove pan from heat, and fill lettuce “wraps” with chicken. Top with desired garnishes.
