I’m typically not a fan of creamy sauces. My biggest fear is that I will unknowingly eat cream cheese, sour cream, or mayonnaise. Anytime a wedding response card asks for a meal selection I go with the beef, because 9 times out of 10, that chicken is covered or stuffed with some bland, creamy gunk, and if you put that in front of me, I will throw a tantrum. More than flavor, it’s the texture that weirds me out. Not to mention none of those ingredients are particularly figure-friendly. And while Lloyd doesn’t eat any of them often (Yea, like I would keep them in my fridge anyway! Pshhhh!) he doesn’t hate them with the same passion I do.

I was thinking of Lloyd when I made this steak. I wanted a deviation from the norm, and wanted to make something a little luxurious. The poor guy eats a lot of chicken and vegetables because I try to maintain a (mostly) healthy diet. But sometimes… you need to live a little. If I was going to make a cream sauce, it had to have fabulous flavor and be velvety smooth. When I saw this recipe for gorgonzola cream sauce, I knew Lloyd would go bananas for me it. I thought it would make a perfect “date night at home” meal.

Easy Flank Steak with Gorgonzola Cream Sauce

Serves 2

Ingredients

  • 1/2 pound flank steak
  • Salt & ground black pepper

Directions

  1. Season steak with salt and pepper.  In a grill pan over medium heat, cook steak for 6-10 minutes on each side until you reach desired doneness.
  2. Remove from heat.  Cover with foil and tent.  Let steak rest for 5 minutes before slicing.
  3. Transfer to a plate and spoon Gorgonzola Cream Sauce over the top. 

Gorgonzola Cream Sauce

Ingredients

  • 1 tablespoon butter
  • 1 shallot, minced
  • 1 cup heavy cream
  • 1/4 pound Gorgonzola
  • Salt and freshly ground black pepper

Directions

  1. Heat a medium size saucepan over medium heat.  Add butter to melt.
  2. Sauté shallots until tender.
  3. Add the heavy cream and let reduce by half.
  4. Turn heat to low, add the Gorgonzola and stir until it melts.
  5. Season, to taste, with salt and pepper.

Flank steak is a lean but cheaper and tougher cut of meat. When cooked correctly, it’s pretty delicious. Drizzled over the juicy steak, the gorgonzola cream, sauce took takes the meal from ho-hum to heavenly. The sauce looks elegant but is deceptively simple to make. I have not had much success with rousses (As in roux, plural- I know that looks funny!) and because this sauce didn’t use flour, it had a beautiful consistency that was perfectly thick but not at all clumpy. Its flavor was rich and tangy, but not too intense.

I anticipated enjoying my share sans sauce, but after trying it, I found myself using my steak like a sponge to soak up every.last.drop. on my plate!

And Lloyd? Lloyd didn’t come up for air.

Date night SUCCESS!

  5. I just replied to your comment on my blog asking if you were vegan (because of the yogurt/mayo comment)… but obvs. you are not vegan with a steak and cream sauce recipe! :) I love that “Lloyd didn’t come up for air”.

    Well it certainly does look great! I am the same way as you are. I tried to avoid those creamy sauces. Not only are they not good on the waistline, but they do a number on my tummy! When you aren’t used to that super rich food it can do horrible things to you haha.

    Anyways, this looks great and I am sure Lloyd appreciated the break from the normal chicken and veggies…have a great weekend!

    Umm, Craig would die if I made this for him. He needs more cow in his life ;) Poor boy has to eat way too many odd things!

    I LOVE flank steak, always have. We don’t eat a lot of it either, but like you said, you gotta live it up a little sometimes and that sauce sounds delicious! Once again, lucky Lloyd!

    Im glad this was a success. I can admit that I am a guilty sucker for a creamy sauce, though I don’t often think to put them over my red meat. This looks like it would disappear quickly from our table though! And my god, does it sound indulgent!
