So, I guess baked beans are “thing.”

I guess I’m sort of late to the party, but I never knew they were a “thing” until the past year or so when I started following blogs religiously.  Quite embarrassing seeing as I’m from Boston, a city known for its baked beans.  About that…

*Hangs head in shame.*

It seemed like last summer there were baked beans recipes popping up everywhere, being touted as BBQ staples.  Say what? 

Last week when I started sharing quick, easy and delicious side dishes that were great for the 4th, I remembered the baked beans I’d seen the previous summer.  I asked Lloyd if he liked or ate baked beans growing up.  He told me yes, and recanted tales of how as children, he and his brothers envied his parents, who were privy to the bits of pork in the canned beans served alongside hot dogs.  We talked about this with his parents last night over dinner. 

So, if Lloyd says baked beans are “thing”, well then, they must be.

Easy Baked Beans

Adapted from this recipe

Serves 4-5

Ingredients
  • 1 16 oz. can baked beans
  • 2 tbsp molasses
  • 1/4 cup chopped onions
  • 2 tbsp brown sugar
  • 1 tablespoon prepared mustard
  • 2 tablespoons ketchup
  • 4 slices bacon, chopped
Directions
  1. Preheat oven to 350 degrees F.
  2. Pour beans into a baking dish with, molasses, onions, brown sugar and ketchup.  Stir.  Top with bacon and cover.
  3. Bake for 2 hours or until thick.

So this “thing” turned out to be so easy and so delicious, that I totally get it now.  Smoky and slightly sweet, this fiber packed side dish (toot, toot!) certainly are a great addition to a BBQ menu or a weeknight meal.  In fact, Lloyd ordered beans with his crab cakes at dinner last night. 

See?  They are totally a “thing.”

  7. Confession – baked beans are my FAVORITE thing ever. I will eat them straight out of the can. I know, it’s gross. But I’ve nver thought to jazz them up like this. Now my addiction is gonna get kicked up a notch :) DELISH

  8. If Boston is bean town, the UK is bean country. Baked beans is a staple around here. I like the American sweet baked beans though. Now, you’ve just taught me how to make that :)

  9. Ah yes the blessed Baked Bean! I recently got on this bandwagon myself and have fallen in love with the homemade baked bean. I never thought it could get better than the good ole bushes I grew up with… I was wrong! lol! Great recipe, and beautiful photos!!!

  10. This is just about spot on how I have been making my baked beans for years. The sweetness from the sugar and the molasses and the tang from the ketchup was the only way I could get my kids to eat beans. thanks so much for bringing back some cool memories :-)

  11. I’ve never had real baked beans- just the one from the can (I think) from school lunches. I think I need to give it another try, home made this time and with bacon! LOL
