I’ve got Christmas spirit oozing out of me.

I love everything about the holidays: the music, the magic, the movies, the cards, the decorations, the seasonal treats, and especially the presents the sprinkles.

Say WHAT?!

Yes, the sprinkles.

I’m from Boston.  Although I typically refer to them “jimmies” (which, FYI, are a necessity when ordering an ice cream cone) I think that it’s more appropriate to refer to these “holiday” jimmies as “sprinkles.”  “holiday” jimmies just doesn’t have the same ring to it. 

I have an entire bin of festive “sprinkles” and “non-pareils.”  I’m a sucker for fun food decor.  Unfortunately, I tend to forget about them until the season or holiday passes.  Enter the overpriced, but fun, autumn leaves I purchased that never made their way onto any cupcakes I baked.  You better believe those will be put to good use next fall. 

I came across some Christmas sprinkles in some store recently and I knew immediately how I would make a mess with them what I would bake with them.  I went for round two with the whoopie pies.  As you’ll recall, I wasn’t all that pleased with the recipe I used last time- it was super greasy.  Also, many of my “cakes” were flat. 

This time I did better with the cakes, but I am still kicking myself for deciding against gifting myself the whoopie pie pan from Crate and Barrel that was in my cart.  (Santa, are you listening?)  Since my cakes are not perfectly matched in shape or size, some of these whoopie pies appear to be “vomiting” the sprinkles.  No, really… look closely at the top one.  It looks like it’s foaming at the mouth. 

Told you I was oozing Christmas spirit. ;)

Although they look sloppy, friends and family have been gobbling them up.

I sent a friend home with some treats for her mom- she told me today that her dad and brother fought over the last whoopie pan. 

A little Christmas Sprinkle Vomit never hurt no one.

Whoopie Pies

Ingredients

For cakes

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup well-shaken buttermilk
  • 1 teaspoon vanilla
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg

For filling

  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 1/4 cups confectioners sugar
  • 2 cups marshmallow cream such as Marshmallow Fluff
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 350°F.
  2. Whisk together flour, cocoa, baking soda, and salt in a bowl until combined. Stir together buttermilk and vanilla in a small bowl.
  3. Beat together butter and brown sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer or 5 minutes with a handheld, then add egg, beating until combined well. Reduce speed to low and alternately mix in flour mixture and buttermilk in batches, beginning and ending with flour, scraping down side of bowl occasionally, and mixing until smooth.
  4. Spoon 1/4-cup mounds of batter about 2 inches apart onto 2 buttered large baking sheets. Bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until tops are puffed and cakes spring back when touched, 11 to 13 minutes. Transfer with a metal spatula to a rack to cool completely.
  5. To make the filling, beat together butter, confectioners sugar, marshmallow, and vanilla in a bowl with electric mixer at medium speed until smooth, about 3 minutes.
  6. To assemble, Spread a rounded tablespoon filling on flat sides of half of cakes and top with remaining cakes.

This recipe was much better than the last.  The cakes had a rich chocolate flavor, and the filling is gooey and moist.  I could have filled them with just the fluff and been happy!  From what I understand, this recipe is pretty “authentic” to the original Amish way of making them.  I would recommend using less butter and more fluff if you prefer a whipped, fluffy, sugary filling, much like the pre-packed whoopie pies found in the grocery store.  You could also adjust the flavor by adding almond extract, peppermint extract, etc.  These pies were enormous!  I would suggest cutting them into quarter before serving.  They are a yummy, festive dessert to serve at a holiday gathering.

  4. Those are so cute! Sprinkles vs Jimmies always makes me laugh- my first job was at an ice cream stand and we called them sprinkles but always coded them with a “J” for jimmies…I guess we just couldn’t decide ;)

  11. Sprinkles are so magical – they have a way of increasing the delicious-factor by about 10 times! This look so yummy.

    I have a whoopie pie pan, but you can also try to get more uniform cookies by using a cookie or ice cream scoop with a spring release.

  18. They certainly do look festive. I grew up calling them sprinkles, but I do get a kick out of “jimmies” now that I live in Beantown.

  30. I’d never heard of jimmies until I moved to NYC and someone said, “You gonna eat those jimmies or what?” I had always said sprinkles! Whatever you call them, they’re gorgeous on these whoopie pies! The only thing that would make them more beautiful is if they were in my mouth.
