One can never have too many Christmas cookie recipes, right?
Much like snickerdoodles, crackle cookies (or crinkle cookies) are some of the most popular ones to show up around this time of year. Despite being dubbed “double chocolate,” the flavor here is not too rich, as the “double” chocolate actually comes from white chocolate. They are slight crunchy on the outside, and rich with a fudgy, brownie-like texture on the inside. Once they bake, the sugar coating spreads and “cracks",” giving them a fun presentation.
Double Chocolate Crackle Cookies

Yields 24 cookies
Ingredients

1 1/2 C flour

1/2 C sugar

1/2 C cocoa powder

1 tsp baking powder

1/2 tsp salt

6 tbsp unsalted butter, melted

2 eggs, lightly beaten

1 tsp vanilla
-
1 C white chocolate chips

1 C powdered sugar
Directions

In a medium bowl, mix flour, sugar, cocoa powder, baking powder, and salt.

In a separate bowl, combine melted butter, eggs, and vanilla. Add to dry ingredients until well combined. Dough will be thick and sticky.

Add white chocolate chips and stir.

Cover cookie dough with plastic wrap and chill for at least one hour, or until firm.

Preheat oven to 350 and line baking sheets with parchment paper and cooking spray. Place powdered sugar in a shallow bowl for dipping.

Using a cookie scoop, roll dough into balls, about one tablespoon each, and roll in sugar.

Place balls onto baking sheets. Do not press down.

Bake for about 10 minutes, or until they puff up and the tops crack.

Place on a rack to cool completely before serving.
