My current obsession is chili, in any form.

I find myself eating it weekly, daily, and sometimes multiple times a day.  My excuse is that it’s just so flippin’ easy, the ingredients are so accessible, and it’s always delicious.  Plus, it’s feeds me and Lloyd for an entire week.

Win, win, win, win.

I’ve already shared some of my chili recipes, but this is the simplest of them all, calling for only six or seven ingredients!  I came across it in The Trader Joe’s Cookbook, and it gets its name because it can be made lightning fast. 

White Lightning Chili

From Cooking with Trader Joe’s

Serves 8

Ingredients

  • 1 lb. ground chicken
  • 2 C chicken or vegetable broth
  • 1/2 C quinoa, rinsed well
  • 1 15 oz. can cannellini beans, rinsed and drained
  • 1 15 oz. can kidney beans, rinsed and drained
  • 1 16 oz. jar salsa verde of choice (I used Pace Garlic & Lime Verde Restaurant Style Salsa)
  • cheese, for serving
  1. In a pan over medium heat, heat chicken until cooked through.  Do not drain.  Set aside.
  2. Bring broth and quinoa to a boil in a large pot.
  3. Add chicken, beans, and salsa to quinoa and return to a boil. Cover and simmer for 30 minutes, stirring occasionally.
  4. Top with cheese, if desired.
