Right around this time every year, I start to feel like my insides are one giant slip and slide from all the butter I’ve consumed.   I suppose the lubrication will just get the food to my belly quicker.  It certainly won’t stop me from continuing my holiday baking, or enjoying it for that matter.

This cake isn’t a recipe so much as an idea.  My first attempt was sub-par, but it’s definitely aworth sharing.  I saw it on Pinterest and immediately knew I had to make a Christmas version.

I had a hard time finding a cookie cutter that was small enough to fit.  I recommend finding a shape without too much detail so it lines up nicely.  (For example, in the original recipe, the pumpkin worked well.)  My Christmas tree got a little smushed and crooked and resembled more of a warped triangle than anything, so I was surprised that so many people “understood” what I was going for and realized it was supposed to be a tree.

Peekaboo Gingerbread Pound Cake

Yields about 12 slices

Ingredients
  • 1 (14-ounce) box gingerbread mix
  • 1 (16-ounce) box pound cake mix
  • all ingredients needed for both cakes, as listed in the instructions
  • small cookie cutter in shape of choice
Directions
  1. Prepare the gingerbread according to the directions on the box, and bake in a greased 9×5 loaf pan.  Remove from the oven 10 minutes sooner than the recommended time.  This will help ensure that your cake doesn’t dry out.  Allow to cool completely and refrigerate. 
  2. Once cold, cut gingerbread into large slices.  Using the cookie cutter you selected, cut the shapes out of the bread. 
  3. Grease and flour another 9×5 loaf pan.  Place the cutouts down the center of the pan, all facing the same direction. 
  4. Prepare the pound cake according the directions on the box.  Cover the cookie cut outs by pouring the pound cake over them, carefully.  Be sure to cover the top of the cutouts.  Bake according to the directions on the box. 
  5. Remove from oven and cool.  Slice into cake to see your “surprise!”
