You know how some people make New Year’s resolutions?

Like, turn the calendar, it’s a new year, I’m inspired, I’m gonna make some changes, like I’m join a gym, or I’m going on a diet, or I’m giving up coffee, or I’m going to go for the job I’ve always wanted, or I’m going to pick up all the messes and piles around the house that my fiancé yells at me for?

Uh… am I the only one who made that last resolution?

It’s totally legit. I have to give it to Lloyd, I am an organized messy person. I leave piles of… stuff… everywhere.

Bills, receipts, wedding contracts, the title to my car, and product registration paperwork, all piled neatly on the surfaces of any flat kitchen space.

Muffin tins and “fall out shelter supplies” aka endless cans of chickpeas, almond milk, and chicken broth are all perched on our kitchen island, ready to go on the shelves downstairs.

Laundry baskets sit in the hallway because I was going to take it downstairs but then I got distracted and just left it there. Or leaving the clean laundry in the basket. For a week.

Shoes that I kick off and bras that come off the second I walk in the door (what?!) from work are all sitting on the staircase just waiting for me to bring them upstairs where they belong.

Guilty.

While I don’t typically participate in New Year’s resolutions, since I already go to the gym regularly and I’m not sure what, exactly, a diet is, this year I made “new wife resolutions,” since this is the year we’re getting hitched. Specifically, I told Lloyd that I was going to be better about picking up my things. And, I’ve done pretty well! And, in the beginning, Lloyd commended my good behavior.

And then, when the positive affirmations stopped, I was all, “did you notice, I folded all my laundry today?!” Or, “did you see, there stairs are empty. EMPTY!”

And, like the wonderful father he will one day be, he told me I was looking for praise for things I should be doing anyway.

Zing.

For the most part I’ve done well with my resolution, but another new “wife” resolution I’ve fallen short on was to continue to cook dinners for us that we could enjoy together, and to make more meals that incorporated ingredients he loves: seafood, artichokes, and buffalo chicken paired with bleu cheese, to know a few. While I certainly cook often, he is more than fine with the occasional breakfast for dinner, peanut butter and jelly sandwiches, and my request that he “please just finish the leftovers so I don’t have to throw out food.”

But when I do follow through, making meals with ingredients he loves, he totally swoons.

Buffalo Chicken Cups

Serves 2

Print this recipe!

Ingredients

  • 2 boneless, skinless, chicken breasts
  • buffalo sauce, to taste
  • 12 wonton wrappers
  • 1 C cheddar cheese
  • 1 C bleu cheese
  • 1 C chopped scallions

Directions

  1. Cook and shred chicken and toss with buffalo sauce.  Use enough sauce to achieve your desired heat level. 
  2. Preheat oven to 375F.  Spray a muffin tin with non-stick spray and fill with wontons, forming “cups.”  Cook until just lightly browned.
  3. Remove cups from oven and allow to cool. 
  4. Once cooled, fill cups with shredded chicken and cheddar cheese.  Return to oven until cheese melts.
  5. Sprinkle with bleu cheese and scallions.

  3. Girlfriend, I am the SAME WAY! My husband and I have this chair in our bedroom that sits right by my walk in closet and I swear that chair is NEVER empty. It houses all my clothes (dirty & clean), books, shoes, and any and everything else I can pile in there! My suggestion would be to put decorative containers in the spots where you most likely pile. That way, you can throw it in the container, close the top, and your messy pile is contained!

    Also, love buffalo chicken anything…this recipe looks bomb! And that eggplant colored plate is beautiful!

  4. I am very guilty of the very same thing. Too many piles sitting around waiting to be put away. And sadly I don’t make dinner that often either. Shoot I need to work on that “being a better wife” resolution:-) Although I am pretty sure if I made my hubby these yummy looking buffalo chicken cups, he wouldn’t mind some of the piles or the fact that I haven’t dusted this week.

  5. Okay, so these look totally amazing! We love buffalo chicken anything, and I’m pretty sure making these would be a pretty good way to smooch up to my hubby (I pile stuff everywhere, too). And, I am totally in love with your serving plate–sooooo pretty!

  7. All week long or maybe for 2 weeks, I throw all my receipts, check stubs, whatever on our filing cabinet. Then, I wait until my fiance files them. :)

    Haha, we have more than a few piles around our house, too. ;-) I love anything buffalo chicken and I am all over these!!

  9. It’s like you stopped by and took a look into my living room. Granted, we’re in the process of moving, but piles EVERYWHERE. I can’t take it. It’s totally time to clean up.

    And this looks so tasty…maybe a post-clean-up reward?

    I have to admit, I’m anal and would probably be more like Lloyd lol. But I am totally with you on get the damn bra OFF the second you can. I hate them!

    I am such a huge fan of making mini cups with won ton wrappers and anything made with buffalo flavor is an instant winner. Love these!

  21. This is a recipe my husband would love! He is the messy one in our house though…I’m always trying to implement some crazy new organization system.
