I’d had the idea to incorporate buffalo chicken into a nacho dish in my head for some time, but never got around to executing it.  Not long after, a recipe popped up in my reader and I knew it was a sign.

Buffalo Chicken Nachos

Baked Layered Buffalo Chicken Nachos

Ingredients

  • 1 bag of tortilla chips
  • 8 ounces of shredded chicken, covered with buffalo sauce
  • 1 1/2 cups sharp cheddar cheese
  • 1/2 cup crumbled bleu cheese
  • 1/2 cup crumbled gorgonzola cheese
  • 1/4 cup buffalo sauce (or more)
  • 1/4 cup chopped scallions
  • sliced avocado for garnish

Directions

  1. Preheat the oven to 450.
  2. Cover baking dish with a layer of nachos
  3. Top with chicken, cheese, buffalo sauce. Continue layering. Bake for 5-10 minutes, until cheese melts. Drizzle additional wing sauce over top and garnish with scallions and avocado.

This dish is a crowd-pleaser.  I think most people go bananas for buffalo anything.  (And then there are a few weird folk who don’t.  We’ll forgive you.)  The chicken adds some lean protein, which bulks it up if you’re looking for a heavier app.  The buffalo sauce gives it a nice kick, and the melted cheese provides that “comfort food” feeling.  The creamy avocadoes and crunchy scallions enhance the flavor.

Best served with some ice cold beers Pepsis.   Winking smile

    I am a huge fan of buffalo chicken! This looks incredible. I am definitely bookmarking this recipe. I MUST make it! So yum! I like the addition of avocado on top!

    ok..this is a silly question, but since I am pretty new to experimenting with new recipes…what is the best way to shred chicken? My girlfriend uses canned chicken..but that kind of makes me cringe…

  38. @erin, Canned chicken makes me cring, too! You can poach or bake the chicken and then shred it. I prefer baking it and then using two forks. My first attempt at poaching was unsuccessful.

    These look great – but I have a fear of the word ‘buffalo.’ And it’s not that Im scared of the pretty mid-lands roaming beast. But I always imagine sopping wet wings. These nachos don’t look that way at all! They look crispy and yet not dry. I love the avocado on top! (forgive my buffalo reference, its late and I feel my words may not make much sense on paper… )
